The quality of our seafood is directly tied to the integrity of our cold chain. Southern Cal Seafood employs advanced chilling and freezing technologies to lock in the freshness and nutritional value of our catch the moment it leaves the water.

Our Three-Point Cold Chain Protocol

  1. Immediate Chilling at Sea: All catch is immediately placed in refrigerated seawater (RSW) or heavily iced to rapidly bring the core temperature down to near-freezing, minimizing degradation.
  2. Blast Freezing Technology: Upon arrival at our facilities, product destined for the frozen market is processed and subjected to **blast freezing** at temperatures as low as -40°F (-40°C). This rapid freezing process prevents large ice crystal formation, preserving the texture and flavor.
  3. Controlled Storage and Transport: Our cold storage warehouses and refrigerated transport units maintain a consistent temperature of -18°C (0°F) or lower, ensuring the product remains in peak condition until it reaches the customer.

Temperature Monitoring

We use state-of-the-art digital temperature loggers to monitor and record temperatures throughout the entire process, providing full traceability and verification of cold chain compliance for our partners.
